Chunky Monkey Chia Seed Pudding | Blueberry Chia Seed Lemonade

It's a new year and I know a lot of us are starting new healthy diets or getting back to our clean eating(like myself). A perfect way to do this is to add chia seeds to your diet. Chia seeds are an amazing "super" seed with a lot of health benefits. Click here for a list of heath benefits and other ways to add them to your diet. Below are two of my fave ways to use chia seeds. A chia seed drink and a chia seed pudding.


Chia Seed Drink | Blueberry Lemonade

Ingredients
Juice of 2 lemons
Skinny Girl Monk Fruit/Sweetener of your choice(to taste)
Fresh Blueberries
2-3 Tablespoons of chia seed gel

Directions
1. Juice 2 lemons by hand or with a citrus juicer and strain.
2. Pour lemon juice into a glass & add 4 cups of water
3. Use sweetener to taste
4. Add whole blueberriess & chia seed gel to glass
5. Blend a few blueberriess, chia seed gel and lemonade in a blender
6. Add above mixture to glass
7. Shake, chill and enjoy!

You can use any combination of fruits or berries that you like. Raspberry, strawberry and mango would all be delicious.


Chia Seed Pudding | Chunky Monkey


Ingredients
2 very ripe bananas
1 tbsp of unsweetened cocoa powder
2 cups of coconut milk(or whichever milk you prefer)
1/3 cup of chia seeds
chopped walnuts

Directions
1. Add bananas, cocoa powder and coconut milk into blender and blend
2. Add chia seeds to blender and blend
3. Pour mixture into a container and cover
4. Refrigerate overnight
5. In the morning top with walnuts and enjoy
